Fruit and Nut Chia Seed Pudding Recipe

This is one of the classic chia seed breakfast recipes and you can customize it with fruits like cherries, bananas and figs. Change up the nuts and fruits and create a new dish every morning.


  • 2 1/2 cups unsweetened almond milk
  • 1/2 cup kiwis, peeled and chopped
  • 1/2 teaspoon ground cardamom
  • 2 teaspoons honey
  • 1 teaspoon organic vanilla extract
  • 1/2 cup chia seeds
  • Handful of nuts like almonds, hazelnuts, pine nuts, etc.


  1. Blend milk, cardamom, honey and vanilla together in a blender on high until smooth. Pour the milk mixture over chia seeds and whisk thoroughly. Let rest for 5 minutes then stir again. After 10 minutes, stir again. Cover and refrigerate at least 3 hours or overnight.
  2. Before serving, give the pudding a good stir and divide into 4 cups; top with fruits and nuts.

Apple Chia Seed Custard

This is a dessert that will leave you feeling happy and full while satisfying that sweet tooth.


  • 1 apple, pitted and chopped
  • 1 cup Greek yogurt
  • 1 teaspoon peanut butter
  • 1 teaspoon chia seeds


  1. Put all the ingredients in a blender and blend well.
  2. Serve chilled.

Chocolate Pistachio Chia Shake

This is one of our favorite chia seed recipes for weight loss because who would think that something with the consistency of soft-serve ice cream can be such a healthy frozen dessert? If you want it like a slurpable shake, simply add more milk.


  • 1/2 cup unsweetened almond milk, more if need to thin
  • 2 tablespoons chia seeds
  • 3 whole medjool dates, pitted
  • 1/3 cup pistachios, roasted and shelled; more for topping
  • 3 frozen medium, very ripe bananas, peeled and sliced
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup plain Greek yogurt or use coconut milk yogurt
  • 1 teaspoon organic vanilla extract


  1. Mix together the milk and chia seeds. Let it sit for 10-15 minutes.
  2. Meanwhile, add the pistachios and dates and blend in a food processor. Combine until the mixture becomes finely chopped and almost buttery, scraping down the sides as you go. You want to get it as smooth as possible.
  3. Add the chia seeds + milk mixture to the blender, the frozen banana chunks, cocoa powder, Greek yogurt and vanilla extract. Blend until thick, creamy, and smooth, about 3-4 minutes. Scrape down the sides of the blender as needed. If the shake is too thick, add more milk.
