Healthy Hearty Vegetarian Lasagna

This food blog is an extra special one because it is an all-round favorite in the allAyurveda office as well. A healthy organic vegetarian lasagna.

Any lasagna is broken down into three parts, the pasta, the tomato sauce and the cheese. Now cheese is really up to your preference and budget, you just want to make sure that if you are mixing different types of cheeses, that they have even melting points.

So let’s cover the Organic Tomato Sauce.

For this sauce you will need these healthy ingredients:

  • 6-8 cloves organic garlic, thinly sliced
  • ½ chopped white onion (optional)
  • 2 teaspoons organic dried oregano
  • Handful fresh organic basil, coarsely chopped
  • 2 teaspoons sea salt
  • 6-7 large organic tomatoes
  • ¼ cup, 2 tablespoons olive oil
  • Fresh ground pepper to taste

First saute the onions and garlic into a light sweat or until they turn translucent. Season them with salt and pepper.

At the same time peel the tomatoes, you can do this by lightly boiling them for a minute and moving them into an ice bath.

Next add in the rest of the species into the pan with the onions and garlic but stir constantly and do not let darken.

Add the tomatoes and stir until you get a sauce-like consistency, and top with the basil! Mmm…delicious.

Fresh organic tomatoes are packed with antioxidants. These can help keep free radicals in your system which boosts your immune system as well as prevents muscle loss. Also, making a sauce from scratch will allow you to skip on the harmful preservatives of store-bought foods. Besides, it just doesn’t have that home cooked goodness to it.

The Healthy Lasagna

For this you will need the following ingredients:

  • 1 red pepper
  • 1 yellow pepper
  • 2 red onions
  • 1 courgette
  • 2 aubergines
  • 1 bulb of fennel
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons salt

For the Cheese Bechamel Sauce you will need:

  • 800 ml milk
  • 100 g butter or 80 ml sunflower
  • 80 g plain white or spelt flour
  • 50 g Cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon grated nutmeg
